We buy our bottles from the only company authorized by the health authorities to sell reused bottles.

One of the most overlooked and underestimated approaches to sustainable brewing lies in aligning yeast selection with the natural rhythms of the seasons. By choosing yeast strains that thrive at room temperature, we can significantly reduce the energy required to heat or cool fermentation environments.
In the colder months, we can take advantage of the naturally lower temperatures, allowing wild yeasts and bacteria to work the way we like.
Additionally, Brettanomyces strains, often used in farmhouse ales and Saison’s, can tolerate a wide range of temperatures and are well-suited for transitional seasons like spring and autumn.
By adopting this seasonal approach, we not only reduce our carbon footprint, but we also reconnect with traditional terroir-based brewing methods that celebrate the natural flow of the year.
